This week I have done some baking. I made this cheesecake. It tastes so nice and was actually really simple to make! It would make the perfect cake to server at summer barbecues or parties!
225g of original digestive biscuits
100g of melted butter
250g of mascarpone
600g of soft cheese
4 eggs (2 whole eggs 2 egg yokes)
zest of 3 lemons, juice of 1
4 tbsp plain flower
175g caster sugar
For the top
142ml pot of soured cream
3tbsp of lemon curd
handful or raspberries (or strawberries)
How to make the cake!
Preheat the oven to 180’c/gas mark 4.
Line the bottom only of a 23cm springform tin with greaseproof paper.
Tip the biscuits into a food processor and blitz to make fine crumbs then add the melted butter and blitz again. Tip the mixture in to the tin and press then place in the fridge to chill.
In a bowl whisk together all the other ingredients until completely combined.
Pour (more a scoop) into the tin and bake for 35-40 minutes until the cheesecake wobbles slightly when moved.
Turn off the evan and leave the cake to completely cool inside. When cooled remove from tin and top with soured cream, swirl the lemon curd over the top and decorate with berries!
Then eat it and enjoy!
